Banana bread with Strawberry & Chia Jam

  1. Preheat oven to 180 degrees, grease a small loaf tin with baking paper
  2. In large mixing bowl, combine oat flour, almond meal, eggs,tahini, maple syrup and coconut oil. stir well, adding in coconut, bananas, cinnamon, nutmeg, chia seeds, flaxseeds and walnuts.
  3. Once batter has reached smooth consistency transfer to loaf tin, bake for 40 minutes uncovered or until fully cooked through when tested with skewer
  4. Allow to cool and serve with strawberry and chia jam
  5. Another way to serve is with a small amount of coconut oil sprinkled with cinamon

Strawberry and chi jam

  1. place strawberries and dates into food processor and process until blended
  2. scrape down sides and add water and chi seeds and process until combined
  3. set for 2 hours in fridge or overnight
